This is one of my favorite recipes. I like to think of it as a luxurious hug for the taste buds!
Made from simple ingredients, it’s guilt-free, sweet and velvety.
Who knew a healthy chocolate mousse could be this easy and delicious?
Ingredients
- 3 medium sweet potatoes
- 3 pitted dates
- 1 teaspoon espresso powder (make sure there are no added ingredients)
- 1/4 cup Cocoa powder (or more, depending on your taste) (make sure there are no added ingredients)
- 1/2 cup aquafaba (liquid drained from 1 can of no-salt added chickpeas)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (or more, depending on your taste)
Method
- Bake the potatoes at 400 degrees for 45 minutes.
- Reduce heat to 350 and bake for another 30 minutes (this brings out the sugars and caramelizes them for a deeper, richer flavor)
- I like to place the potatoes in the refrigerator overnight to let the flavor from the caramelized sugars set in. This is not a requirement, but it does deepen the flavor.
- While the potatoes are cooking, soak the pitted dates in warm water rehydrate and soften them, or soak for 15-20 minutes before you follow the steps below
- Once the potatoes are cooled (or after refrigerating overnight), scoop out the flesh and place in a high speed blender
- Add the remaining ingredients, and blend. You may have to stop frequently and scrape down the sides.
- If needed, add more aquafaba, one tablespoon at a time, until you reach your desired consistency
