This chickpea salad sandwich is a lunchtime (or dinnertime) superhero!

While it is important to reduce one’s consumption of commercially processed foods, you can still process things in your kitchen and make them healthy and full of flavor. I learned early on in my vegan journey that with the right set of tools, I could create meals that were delicious and also felt good to eat. Studies have shown that we respond to the way food feels in our mouths. Texture and consistency are important to the satisfaction of our meals.

So, it’s very important when taking on a vegan and/or whole food plant based diet to give yourself a VARIETY of flavors, textures, and consistencies.

If you don’t you will become bored very quickly!

This recipe is a favorite of mine. It is versatile – you can take it in any direction you like, flavor-wise, and it has a consistency that is pleasing. You can whip it up quickly and enjoy the deliciousness for days.

I like to pile it high between Ezekiel bread slices with lettuce, sprouts, tomato, and a a little jalapeno mustard for the ultimate bite!

  • Drain one can of palm hearts and pulse in food processor till flaky. Place in a bowl. The hearts of palm help give this salad a distinctive consistency that is reminiscent of chicken salad.
  • Drain 1 or 2 cans of no salt added chickpeas.
  • Place in food processor and pulse till brown up into chunks. Don’t puree!!!
  • Place flaky palm hearts back in processor with chickpeas.
  • Add a couple of tablespoons of vegan mayonnaise (homemade tofu mayo works well).
  • Pulse till you reach a chicken salad type consistency.
  • Place in mixing bowl and add spices. I usually always add a little celery, red onion, and capers, but you can add any spices you like to make your own creation.
  • You can take this in the direction of chicken salad by adding poultry spice, or you can make it more tuna-like by adding a small amount of crumbled tuna salad or kelp seasoning.
  • I add diced red onion, poultry seasoning, dill, red pepper flakes, capers and pimentos. Really, you can add whatever you like.
  • Once everything is mixed well, refrigerate for an hour or so to give the flavors time to blend.
  • Enjoy!
